This is incorrect.

Provided you made a backup while you were still on iOS 6, you can go back to it.

Just did it today for a lady who decided she didn't like the colors. She's 95, she gets to do whatever she wants as far as I'm concerned.

We just connected the iPad, wiped it, restored from backup. Took under an hour.
