I am donating my iPad to a charity. If I erase and reset to factory settings, can I rest assured that data cannot be extracted, even it falls into the wrong hands in another country?

If you reset your iPad 2 using iTunes, it will effectively be wiped. As far as assuring data can not be extracted, no one can assure you of that since nowadays even secure encrypted data can be compromised.

There is an app that is a few dollars from the app store, restore the ipad, install the app from itunes on the computer and run a few cycles of it and then restore it again and your information should be off of the device .
