Default "Safari" Mail account

When I click on "Mail Link to this Page" in Safari on my iPad 3, it brings up a new Mail message page. The "From" field, however, shows an account that I didn't even know that I had!

1. How can I change the default From account to one of my own choosing?

2. Where did this account come from? Does it affect anything else? Can/should I eliminate or change it?
