i basically know it probably won't delete my projects, but will uninstalling my Xcode to upgrade to a newer version going to delete my projects?

i guess to take a precaution i can put them on a flash drive but i have a lot of projects i rather not waste that much time.

Uninstalling Xcode wont delete your projects, as long as they are not in the Developer folder where Xcode is installed, so make sure they are in a folder in the User Domain.

But I think backing up your projects on a regular basis to an external drive is crucial, your code takes a lot
of time and effort, why would you not want to make backup copies.
