A lot depends on how you intend to use your iPad. If you use it for doing word processing for example, you can purchase Pages from the Mac App store for $9.99. There are a multitude of free and paid applications available. Just open iTunes and access the iOS app store and do some searching or browsing about.

Everything from business and educational apps to games are available. Depending on how much memory your iPad has, you should be able to load it up with lots of apps.

Add to what chscag has said look as a student download and have a good look at Apple - iTunes U - Learn anything, anywhere, anytime. which is solely aimed at students.

My vote would be Angry Birds.

I've always wanted to be smart, handsome and modest. But, I guess I'll have to be satisfied with two out of three . . .

For note-taking, you might want to look at Notability ... lets you type, or scribble, or audio record (or a combination thereof) your notes.
