updating software, re-unlocking, restoring data

So I have an iphone 3G running on the 3.0 software. It's a pain in the butt because I can't use any of the new apps that are released as many of them require the 4.0 and such. I know that if I update my software it'll relock my phone. My question then is, can I update my software and do the unlock. Well, that's only part of the question. The other part of my question is I came across something called the iphone backup extractor. Has anyone used this? If I backup my info into itunes (how do I do this?) and I use the iphone backup extractor....can I restore it back onto my phone after the update? Will it be compatible?
