Backup everything with iTunes on Jailbroken iPhone 3Gs...

Hello all and sorry if this has been asked before but couldnt find the answer by searching. Here's my setup:

iPhone 3Gs Jailbroken 4.2.1
iMac OS10.6.7
iTunes 10.2.1

I bought this iPhone already unlocked and Jailbroken. Has Cydia and Installous already on it. I've been downloading some apps and everything is working great. But i'm looking for a way to backup everything in one shot if possible using iTunes. I haven't done any syncing or backing up yet with iTunes for fear of losing the apps or the jailbreak. Can someone out there direct me to the best course of action? Ultimately i'd like one app that can handle all of this and in the event i have a problem, can restore from that same app.

I appreciate the help in advance.
