How to set up mail boxes in iPhone mail?

Hi,
Just got my 1st iPhone (16 G, 3Gs). Synched with iTunes on my MBP OK. I am stumbling through setting up various preferences. In the mail program - Apple mail program - how do I set up mail boxes to organize saved message? That's so basic but I can't figure it out. Thx.

I'm not sure you can unless you are using the MobileMe e-mail. My personal domain e-mail and my GMail don't seem to be able to do subfolders but MobileMe will let me add folders on the server that will then sync with the iPhone. Then again, I don't store e-mails on my iPhone long term, I do that on my Mac.
