Is there a program that will simply allow my ipod touch to act as a storage device, like other mp3 players, where I can just drag and drop the files?

Also, what is the best video convert for ipod touch? Ie: xvid to ipod, dvd to ipod

Try Floola instead of iTunes.

As far as video conversion goes, try Handbrake. Discussion of ripping commercial DVDs is prohibited here (falls under the category of illegal activity), so I won't get into that.
