Ipod Touch quitting music

Ok I'm obviously living up to my name here - but it's driving me nuts. When I listen to music on my ipod touch I just can't seem to quit out of it other than by actually powering off the ipod - which is annoying as it then has to reboot [or whatever it's called when the apple logo comes up.

Please can someone tell me how to quit the application.

Its one of the few apps Apple lets run in the background. When I'm done listening, I just pause it.
