Since the above, iTunes takes twice as long to recognize my 2 iPhones (original plus 3g) and then the first thing it does is back them up - which takes forever. Can I stop this backup process without affecting the syncing process?

I got the same problem. Now everytime I connect my iPhone 2G with 2.0, it runs backup for 20mins. I just called Apple and the dude said he found nothing from knowledge and told me to search and yell in the Apple discussion board.

Mine takes a while to backup as well, though nowhere near the 20 minutes potato2051 is claiming. Let's hope Apple makes it a quicker process.
