Every hour when time capsule backs up my files, the anti-virus program starts up (Symantec). How can I stop this?

Also, is there a way to set time capsule to ONLY update once a week?

This may not be the answer you want but I would get rid of Symantec anti virus, it caused more problems than it cures

Uninstalling Symantec AntiVirus from Mac OS X

An alternative I use is the free ClamX, just as effective, the disadvantage is that you run it manually, but you can set-up watched folders like the download folder.

ClamXav

As for weekly back-ups, this may help
