iphoto book layout- unwanted cropping

I've been scanning 20-120 yr old family photos, touching them up, and laying out "Picture Books" with iphoto for my grandmothers, and no matter what layout/format/theme I use, my photos are getting cut off and cropped in undesirable ways. I've been searching for a setting to circumvent this, but haven't seen anything.

Anyone?

Create a new image in Photoshop to the size of a book page (11"x8.5") then layout your photo(s) on this new image, flatten all the layers, save, and import it in to iphoto before placing it on your book page
