Indexing in InDesign CS3

I have a directory layout that I am trying generating the Index for InDesign. There are 7,000 entries.
Problem is that the Indexing captured everything (address, phone, description). I only need to capture the business name. Too many names to index manually.
The business name does have a style tag.
BTW - The data originally came from an XML file that I imported into InDesign and then map the tags to the styles.
My question is...
A. Is there a way to tell the Index to "globally" only capture the business name or to search for it by style tags?
B. Is there a way to delete the existing Index so that I can start over again?
