Does anyone know of a easy to use, reasonably priced, pdf editor for Mac OSX? Adobe Acrobat is $400. I tried something called Wondershare PDF Editor Pro but could not successfully figure out how to do simple text editing and other simple functions.

I use PDFpenPro for $99.99. There is PDFpen for $59.99 and a free trial. I find it easy to use, they have video tutorials on their web site. Here is the link:

I've had zero problems with the Infix PDF Editor. It does all that you're asking.

You can try PDF Nomad or PDFClerk Pro, both from SintraWorks. (PDF Nomad requires Lion or later, PDFClerk Pro requires Leopard or later.) They are free to try and have video tutorials on their website.
