Is it possible to use the most recent 13' Macbook Pro as a display for an Xbox?
I'm going on vacation soon and I wanted to know If I could just use my Macbook instead of bringing along a monitor.

If I could, what would I need to buy?

No. MacBook Pro's have no video in port...they have only a video out port.
