macbook pro with dual monitor question

i have a 2010 macbook pro. and i wanna buy two 23inch monitors.

Whats the best way of hooking up this setup?
Macbook has a mini dvi. and the monitors have a DVI or HDMI. which is the better route?
I looked up some cords. are these good for the best quality?

2 dvi cords 8-Inch LFH 59 Male to Dual Female DVI I DMS 59 Cable (DMSDVIDVI1): Electronics

dvi to mini dvi Mini-DVI to DVI Adapter: Electronics

and even after i get my setup. can i use the two monitors only and not use my macbook screen anymore?
