Believe it or not I've run into many of these issues with the new firefox.. here's what ya do..

  • open a new tab.
  • type 'about:config' and press enter.
  • type pinch in the search field and press enter.
  • change the values for the pinch.in and pinch.out to the following:
for browser.gesture.pinch.in cmd_fullZoomReduce
for browser.gesture.pinch.in.shift cmd_fullZoomReset
for browser.gesture.pinch.out cmd_fullZoomEnlarge
for browser.gesture.pinch.out.shift cmd_fullZoomReset

Did the fix a few months ago. Quick and painless. Not sure why they took out the ability from FF, something about compatibility with some patch... I had to go the Firefox forum to find out about putting back the zoom in/out gesture.
