MacBook Pro - Snow Leopard - Default App?

Hi,
I'm pretty sure when I ran Leopard, I had set my .m4v files to open with Quicktime automatically, instead of iTunes.
Since I've upgraded to Snow Leopard, these files open with iTunes instead of Quicktime. I right-clicked (sorry, mostly Linux & PC user) on the file and chose Open With > Other and then selected Quicktime Player and checked the "Always Open With" option. But it does not always open with. It is just iTunes.
Anyone know how to fix this?
