I got a new mbp with the multi-touch trackpad, which i love, but the only problem is that it only seems to work with apple software. When will software developers, such as Adobe, Google Earth, etc. release updates that support multi-touch functionality? Or, do i have to wait for the next major software releases?

You probably have to wait for the next major software releases, generally speaking. Not necessarily, though. I know the PDF viewer Skim supports pinching to zoom in and out.
