I found out from another forum that If you enter the Apple Store as an education institution(not individual), you get cheaper Mac options without optical drives--like an eMac for $599.

But there's now a new bottom-end iMac model just for education too:
17"
1.6 G5
No optical drive
40 HD
GeForce 4 MX / 32 VRAM
