Close to the memory slots there will be a small button on a square base. The button is usually made of rubber and might be red or grey. Push this button once. This resets the PMU and should force the iMac to recognise the new hardware that has been installed. Another issue that could cause this could be jumper settings. Make sure that the settings on the new drives match the settings on the old hardware.
