Can a Mac server be used as a rack mounted desktop or is there something in it's BIOS that indicates that it is a server and won't allow the desktop OS to load?
Yes, there is a reason for making a server into a desktop, rack mounting.

Nope, You can install the regular OSX on an Xserve if you wish, likewise you can transform any regular Mac into a server by installing OSX server

Excellent! Put an MAudio 1010 card in there and we have a small mixer/effects box for the mobile PA!
