iMac - Cannot restore from backup with new hard drive?

I have just swapped my hard drive on my 17" IMac for a Hitachi Deskstar P7K500 320GB SATA hard drive. I have rebooted using the OS X disk and then erased and partitioned the drive. However, the problems start when I try to then 'restore from backup' and nothing happens? I don't get the 'select a backup source' option, nothing! If any one can help it would be really appreciated.
