External enclosures are pretty cheap. This one is only $15 with free shipping.

Basically you would put your new drive in the external enclosure, clone your old HD over to it, and then take the old drive out of the Mac, and take the new drive out of the external and put it in the Mac. You can then put your old drive in the external enclosure and have yourself a nice external drive for backups or what ever you want, plus your new large drive in the Mac. Everything will work the same except you will have more space.
