Mac Specs: iMac Core2Duo "Childy" MacBook Core2Duo Unibody MacBookPro iPhone 3g
go to System preferences... then accounts... then click the "Login Items" tab. Highlight Skype.

Click the minus "-" button. Viola! No longer a login item.
