Everytime you install something in OS X the last thing you see is Optimizing the Hard Drive....This is essentially defragging the computer. OS X automatically defrags small files constantly.....There really is no actual defragging utility.

The two sort of disk maintainance things I use are Repairing Permissions in Disk Utility and file system checks in single user mode
