kkrog has it right.

And for hyperlinks to work, you need to set your Mail.app preferences to Rich Text.

In Mail, hold down the Command (or Apple key) + , (comma). This will open the Mail.app's preferences. Look at my attachment, this will show you where in the preferences you have to go...
