Don't know about Mac architecture but on PC's two smaller sticks generally perform marginally better than a single large stick - every thing else such as design and production quality being equal.

But the performance differences are usually very small and normally unnoticeable in every day use situations so it comes down to personal preference in most cases.

Just make sure the two sticks are the same if going with two.
