I also have to assume you are talking about a 3G iPad or an iPhone.
I would use an app from MotionX, called MotionX GPS. The reason is that you can download area maps via wifi before you leave so you can have all the maps you will need when you are not able to download over 3G. I have done it when I was hiking down in the Smokey Mountains this spring.
Being able to download maps beforehand will not leave you with a blank screen when you have no connection.
GPS only needs a view of the sky to work.
