Are you sure that you installed Boot Camp 3.0? How about telling us which version of OS X that you used to install Windows 7? The Boot Camp 3.0 assistant is included with Snow Leopard. After you installed Windows 7, did you insert your OS X DVD (Leopard or Snow Leopard) in order to install the drivers and the Boot Camp control panel application?
