The simple answer is (out of the box)...you can connect one external monitor to an iMac.

With some costly hardware...such as this Matrox Dualhead2Go for $286.99:

...then you can connect 2 monitors. There's even a Matrox Triplehead2Go.which costs even more...and you could connect 3 monitors.
