When an iPhone is set to back up to an iMac where does it backup to and how do you restore the data?

Mac Mini Core i7 2012 | White 2009 MacBook 2 Ghz | 733 Mhz G4 Quicksilver
It backs up to iTunes, and to retore you connect the iPhone up, select your device from the options to the left of iTunes and there is a restore button
