Now, take it with a grain of salt, as it's a bit outdated, but it seems fairly doable.

I'm just woundering if anyone would find it worthwhile to build thier own... but hey, thought I'd throw it out there.

I have seen that before. All they did was buy enough Apple replacement parts to build a computer, then put it in a non-apple case. I don't think it was ever worth it, but now that the mac minis are out and can be found for less than $400, it really isn't worth it.
