I'm getting occasional dropouts for a second or two when playing music through an Airport Express. This is my rig-up:
MacBook Pro 13" running iTunes; songs in Apple Lossless format
Airport Express #1 as wireless-n router; also connected to amp #1
Airport Express #2 connected to amp #2
Apple TV connected to amp #3
Internet from cable modem goes to AE #1
Dropouts happen whether 1, 2 or all 3 amps are running. If 2 or 3, they dropout simultaneously.
I tried forcing AE #1 to 5 GHz, but then the MacBook couldn't see it (which also puzzles me).
Until recently, I was using an old PC, and bought the MacBook partly in the hope it would solve the problem. It didn't, but it's a big improvement in many other respects!
