When I insert a CD to import into ITunes the option "select none" is grayed out. It always has a check mark in every song.
Why is it grayed out?

Presumably you have iTunes set up to automatically import songs when you insert a disc, if you want to manually select which songs to import you have to go into preferences and disable the automatic import. i.e Preferences->Advanced->Importing and then select "Show Songs" in the pull down next to "On CD Insert" rather than the default "Import Songs".

Then when you insert a CD it will just show you a song list and you can select the tracks you want and click on the Import button manually.
