Minor updates are distributed through "Software Update", a program that periodically checks for available updates and notifies you. You can manually check for updates by clicking the Apple menu and choosing "Software Update...".

Major updates (like Mac OS X 10.7: Lion, coming next year) are pay-for upgrades that are usually installed via DVD.

Major upgrades, like cwa stated, are not done through your current OS install (such as through Software Update or iTunes). You will need to purchase those and then install it. You can read the Snow Leopard (10.6) installation guide here to get a sense of what installing OS X is like.
