Anyone know of a way that I can prevent my son from installing Ubuntu as a new virtual machine with VMWare Fusion on my MacBook Pro which would prevent him from bypassing my installed parental control software?

Yes.

Don't let him use your computer at all.

That will fix the problem.

PS. But if you must let him use your computer, give him an account that is so user limited that installing software of any kind is impossible. Give your own account a password he cannot guess. Then, set up a firmware password to prevent booting from another startup disk. Again make this password difficult to crack, but something you won't forget.
