I'm going to pick up another 512.

Should I stick with the Apple sold 512 from the Apple Store, or is there a smarter way to go about it?

Apple store RAM prices are very high compared to reputable third-party products. Just be sure to get RAM that is certified Mac compatible. OS X is very demanding in its RAM requirements. Many places will sell pc RAM that appears to have the right specs but won't work in a Mac.
