To remove it from the screen:-

Open Dashboard, click x in bottom left hand corner of screen, click x in corner of widget to remove it.

To remove completely:-

Open Dashboard, click x in bottom left hand corner of screen, click 'Manage Widgets' (At the side of the x), select the widget you want to remove from the list and click on the minus sign in the red circle.

Please note, I don't think that you can permanently delete the widgets that came pre-installed, only ones you've added yourself.

Also, if you want to quickly remove a dashboard applet, hold the option key while hovering your pointer over the application. An X will appear at the corner, and you can click that to remove it.
