I havn't dealt with dual screens before and was wondering if it were possible to use an Apple Mini DVI to Video adapter to hook an intel iMac to a CRT Televison via RCA/Composite or S-Video.

Yes, that is possible, and actually the main purpose of that adapter.

But keep in mind that a television screen is not sharp enough to really work with, it's only good for movies, probably gaming and presentations.

Well that should be ok, movies and gaming will be all it will be used for as I will be setting it up in such a way that my PS2, GC, iMac Logitech X-530, CRT Television and iPod are all interconnected.
