How to delete a user?!

We have an employee that no longer works in our office. How do I take the name associated with his email account and change it?

For example right now it says [email protected] I would like for it to say [email protected] how do I change that? Do I need to do something different for the 'reply to' address? (unfortunately the employee we are loosing was our 'go to - mac guy')

1. Delete his email account from Mail.
2. Set up a new email account in Mail.*

*presuming you're using Mail ... a few details wouldn't kill ya, you know ...

If this is your own domain, you'll need to speak to your website/email administrator about setting up the new account/changing the old one on the server. Do that first.
